- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Stir in the shredded cheddar cheese.
- In a separate bowl, whisk together the eggs, milk, and vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the grated zucchini.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
You can add other ingredients like chopped chives or a pinch of garlic powder to the batter for extra flavor.
