- In a mixing bowl, whisk together soy sauce, lime juice, sesame oil, honey, grated ginger, and minced garlic. This is your marinade.
- Add the pork cubes to the bowl with the marinade. Toss to coat evenly. Let it marinate for at least 15 minutes at room temperature.
- Heat vegetable oil in a skillet over medium-high heat. Once the oil is hot, add the marinated pork in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
- Cook the pork for 3-4 minutes per side, until browned and cooked through. The internal temperature should reach 145°F (63°C).
- Remove the pork from the skillet. Garnish with chopped cilantro and serve with lime wedges.
