Method
- Brown the sausage in a large pot for 5 to 6 minutes. Use a slotted spoon to move the sausage to a plate and set it aside.
- Add butter to the same pot. Sauté onions over medium heat until they become translucent. Add garlic and sauté for one more minute until fragrant.
- Add chicken broth, water, potatoes, salt, and pepper. Bring the mixture to a boil. Boil until the potatoes are tender.
- Stir in the kale and heavy cream. Add the cooked sausage back into the pot. Taste the soup and add more salt and pepper if needed.
- Serve the soup garnished with grated parmesan cheese and/or bacon if you choose to use them.
Notes
If you use regular ground sausage instead of spicy Italian sausage, add 1 teaspoon of dried Italian herb seasoning or Herbs de Provence plus a pinch of crushed red pepper flakes to the sausage while browning.
