Tuscan Sausage and Kale Soup Zuppa Inspired

Ingredients
  

  • 1 pound Spicy Italian ground sausage Use mild for kid-friendly
  • 4 tablespoons Butter
  • 1/2 White onion diced
  • 1 tablespoon Minced garlic
  • 6 cups Chicken broth
  • 2 cups Water
  • 4 Yellow potatoes cut into 1-inch pieces
  • 3 teaspoons Salt or to taste
  • 1 teaspoon Black pepper
  • 2 cups Heavy cream
  • 4 cups Chopped kale
Optional Toppings
  • 1 Chopped bacon or bacon bits
  • 1 Grated parmesan cheese

  • Large pot
  • Slotted spoon

Method
 

  1. Brown the sausage in a large pot for 5 to 6 minutes. Use a slotted spoon to move the sausage to a plate and set it aside.
  2. Add butter to the same pot. Sauté onions over medium heat until they become translucent. Add garlic and sauté for one more minute until fragrant.
  3. Add chicken broth, water, potatoes, salt, and pepper. Bring the mixture to a boil. Boil until the potatoes are tender.
  4. Stir in the kale and heavy cream. Add the cooked sausage back into the pot. Taste the soup and add more salt and pepper if needed.
  5. Serve the soup garnished with grated parmesan cheese and/or bacon if you choose to use them.

Notes

If you use regular ground sausage instead of spicy Italian sausage, add 1 teaspoon of dried Italian herb seasoning or Herbs de Provence plus a pinch of crushed red pepper flakes to the sausage while browning.
