- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Stir in the rinsed and drained black beans, taco seasoning, and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
- Warm the taco shells or tortillas according to package directions.
- Spoon the turkey and black bean mixture into the taco shells. Serve with your favorite toppings.
Notes
You can adjust the amount of taco seasoning to your preference. For a spicier taco, add a pinch of cayenne pepper or some diced jalapeƱos with the onions.
