Turkey and Black Bean Tacos

A quick and easy taco recipe featuring seasoned ground turkey and hearty black beans.

Ingredients
  

For the Taco Filling
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 packet taco seasoning
  • 1/2 cup water
For Serving
  • 12 taco shells or tortillas
  • toppings such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

  • Spoon

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the rinsed and drained black beans, taco seasoning, and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
  4. Warm the taco shells or tortillas according to package directions.
  5. Spoon the turkey and black bean mixture into the taco shells. Serve with your favorite toppings.

Notes

You can adjust the amount of taco seasoning to your preference. For a spicier taco, add a pinch of cayenne pepper or some diced jalapeƱos with the onions.
