Tilapia in Roasted Pepper Sauce

Ingredients
  

For the Tilapia
  • 4 tilapia fillets about 6 oz each
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Roasted Pepper Sauce
  • 1 jar roasted red peppers drained, about 12 oz
  • 1/4 cup chicken broth
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped, for garnish

  • Blender

Method
 

  1. Prepare the sauce: In a blender, combine the drained roasted red peppers, chicken broth, minced garlic, 1 tablespoon of olive oil, and red pepper flakes (if using). Blend until smooth.
  2. Pour the sauce into a small saucepan. Heat over medium-low heat until warmed through. Stir in the lemon juice. Keep warm.
  3. Season the tilapia fillets with salt and black pepper.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  5. Sear the tilapia fillets for 3-4 minutes per side, or until cooked through and flaky.
  6. Serve the tilapia immediately, topped with the warm roasted red pepper sauce. Garnish with fresh parsley.

Notes

You can serve this dish with rice, quinoa, or a side of steamed vegetables.
