- Prepare the sauce: In a blender, combine the drained roasted red peppers, chicken broth, minced garlic, 1 tablespoon of olive oil, and red pepper flakes (if using). Blend until smooth.
- Pour the sauce into a small saucepan. Heat over medium-low heat until warmed through. Stir in the lemon juice. Keep warm.
- Season the tilapia fillets with salt and black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Sear the tilapia fillets for 3-4 minutes per side, or until cooked through and flaky.
- Serve the tilapia immediately, topped with the warm roasted red pepper sauce. Garnish with fresh parsley.
