Tilapia in Roasted Pepper Sauce

Ingredients
  

For the Sauce
  • 1 jar roasted red peppers drained
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Tilapia
  • 4 tilapia fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a blender, combine the drained roasted red peppers, minced garlic, 1/4 cup olive oil, oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Blend until smooth.
  3. Lightly grease a baking dish with 1 tablespoon of olive oil.
  4. Place the tilapia fillets in the baking dish. Season both sides of the fish with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  5. Pour the roasted pepper sauce evenly over the tilapia fillets.
  6. Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Notes

Serve immediately. This dish pairs well with rice or a side salad.
