Method
- Mash the banana in a bowl until it is mostly smooth, or blend it until smooth.
- Whisk the egg into the mashed banana until combined.
- Stir in the flour and cinnamon, if using, until just mixed. Do not overmix the batter.
- Heat a lightly oiled frying pan or griddle over medium heat.
- Pour small amounts of batter onto the pan to form pancakes. Cook for 2 to 3 minutes per side, until golden brown and cooked through.
- Serve immediately.
Notes
If you use a blender, the batter will be thinner. If you mash by hand, the texture will be chunkier. You can substitute whole wheat flour for white flour.
