Ingredients
  

Wet Ingredients
  • 3 very ripe bananas, mashed About 1 1/2 cups mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, sugar, eggs, and vanilla extract until combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  4. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

For a richer flavor, you can substitute brown sugar for white sugar. If you prefer nuts, add 1/2 cup of chopped walnuts or pecans to the batter with the dry ingredients.
