- In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
- Heat olive oil in a skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add about half of the peanut sauce to the skillet with the chicken. Stir to coat the chicken evenly and cook for another minute until heated through.
- Warm the tortillas according to package directions.
- Assemble the wraps by dividing the peanut chicken, shredded carrots, shredded red cabbage, and chopped cilantro among the tortillas. Drizzle with additional peanut sauce if desired.
- Garnish with chopped peanuts and serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the peanut sauce. You can also add other vegetables like sliced bell peppers or spinach.
