Thai Peanut Chicken Wraps

Ingredients
  

For the Peanut Sauce
  • 1/2 cup Peanut butter creamy
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Rice vinegar
  • 1 clove Garlic minced
  • 1 teaspoon Ginger grated
  • 2-3 tablespoons Water or more, to thin
For the Wraps
  • 1 pound Chicken breast cut into bite-sized pieces
  • 1 tablespoon Olive oil
  • 4 large Whole wheat tortillas
  • 1 cup Shredded carrots
  • 1 cup Shredded red cabbage
  • 1/2 cup Chopped cilantro
  • 1/4 cup Chopped peanuts for garnish

Method
 

  1. In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Add about half of the peanut sauce to the skillet with the chicken. Stir to coat the chicken evenly and cook for another minute until heated through.
  4. Warm the tortillas according to package directions.
  5. Assemble the wraps by dividing the peanut chicken, shredded carrots, shredded red cabbage, and chopped cilantro among the tortillas. Drizzle with additional peanut sauce if desired.
  6. Garnish with chopped peanuts and serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes to the peanut sauce. You can also add other vegetables like sliced bell peppers or spinach.
