Teriyaki Chicken Avocado Rice

A simple and flavorful teriyaki chicken, avocado, and rice bowl.

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil
For the Rice
  • 2 cups cooked rice
For Serving
  • 1 avocado sliced
  • 2 tbsp sesame seeds

Equipment

  • Skillet
  • Saucepan

Method
 

  1. Heat sesame oil in a skillet over medium-high heat.
  2. Add chicken pieces to the skillet and cook until browned on all sides.
  3. Pour teriyaki sauce over the chicken and simmer for 5-7 minutes, or until the sauce has thickened and coated the chicken.
  4. Divide cooked rice among bowls.
  5. Top the rice with the teriyaki chicken.
  6. Add sliced avocado to each bowl.
  7. Garnish with sesame seeds and sliced scallions.

Notes

You can substitute chicken breast for thighs if preferred. Adjust teriyaki sauce amount to your taste.
