Sweet Potato & Feta Crumble

This crumble combines the sweetness of sweet potatoes with the salty tang of feta cheese, topped with a crunchy crumble. It's a simple and satisfying dish.

Ingredients
  

For the Sweet Potato Base
  • 2 large sweet potatoes peeled and cubed
  • 1 medium red onion chopped
  • 100 g feta cheese crumbled
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • salt to taste salt
  • black pepper to taste black pepper
For the Crumble Topping
  • 100 g all-purpose flour
  • 50 g butter cold, cubed
  • 50 g walnuts chopped
  • 25 g parmesan cheese grated

Method
 

  1. Preheat your oven to 190°C (375°F). Lightly grease a baking dish.
  2. In a large bowl, combine the cubed sweet potatoes, chopped red onion, crumbled feta, olive oil, oregano, salt, and pepper. Toss to coat evenly.
  3. Spread the sweet potato mixture into the prepared baking dish.
  4. To make the crumble topping, combine the flour, cold butter, chopped walnuts, and grated parmesan cheese in a separate bowl. Rub the butter into the dry ingredients with your fingertips until the mixture resembles coarse breadcrumbs.
  5. Sprinkle the crumble topping evenly over the sweet potato mixture in the baking dish.
  6. Bake for 35-40 minutes, or until the sweet potatoes are tender and the crumble topping is golden brown and crisp.
  7. Let it cool slightly before serving.

Notes

You can add other vegetables like bell peppers or zucchini to the sweet potato base. For a spicier version, add a pinch of chili flakes to the sweet potato mixture.
