Sweet Potato Bowls

A simple and healthy sweet potato bowl recipe.

Ingredients
  

For the Sweet Potatoes
  • 2 sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Toppings
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh or frozen
  • 1/2 cup red onion chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup avocado diced
  • 2 tbsp lime juice

Equipment

  • Baking sheet
  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until tender and slightly browned.
  4. In a large bowl, combine the roasted sweet potatoes, black beans, corn, red onion, and cilantro.
  5. Drizzle with lime juice and toss to combine.
  6. Divide the mixture into four bowls and top with diced avocado.

Notes

You can add other toppings like salsa, sour cream, or a sprinkle of cheese.
