Sweet Potato and Ground Turkey

Ingredients
  

For the Sweet Potatoes
  • 2 medium sweet potatoes peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Ground Turkey
  • 1 pound ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

Method
 

  1. Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  2. Roast the sweet potatoes for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  3. While the sweet potatoes are roasting, cook the ground turkey. Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned.
  4. Drain any excess fat from the skillet. Add the chopped onion and cook until softened, about 5 minutes.
  5. Stir in the minced garlic, chili powder, and cumin. Cook for another minute until fragrant.
  6. Serve the ground turkey mixture alongside the roasted sweet potatoes.

Notes

You can add other vegetables like bell peppers or spinach to the ground turkey mixture. Adjust seasonings to your preference.
