Method
- Preheat your oven to 325 degrees F (165 degrees C). Coat a 9x4-inch loaf pan with cooking spray.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Set this mixture aside.
- Beat the sugar and butter with an electric mixer in a large bowl until the mixture is smooth. Add the mashed bananas and mix until they are combined.
- Add the eggs one at a time, beating well after each addition. Stir in the milk and vanilla extract.
- Stir in the flour mixture, walnuts, and chocolate chips until they are just incorporated. Do not overmix.
- Pour the batter into the prepared loaf pan. Tap the pan on the counter to release any air pockets.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean. This takes about 1 hour and 10 minutes. Let the bread rest in the pan for 15 to 20 minutes before removing it from the pan. Slice and serve.
Notes
The key to moist bread is using very ripe bananas and mixing the dry ingredients into the wet ingredients only until they are just combined.
