Ingredients
  

For the Salad
  • 2 cups Corn kernels fresh or frozen, thawed
  • 1 Cucumber seeded and diced
  • 1/2 cup Red onion finely chopped
  • 1/4 cup Cilantro chopped
For the Dressing
  • 1/4 cup Mayonnaise
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Method
 

  1. In a large bowl, combine the corn, diced cucumber, chopped red onion, and chopped cilantro.
  2. In a small bowl, whisk together the mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the corn and cucumber mixture. Toss gently to coat all ingredients.
  4. Serve immediately or chill for later.

Notes

For a spicier salad, add a pinch of cayenne pepper to the dressing. You can also grill the corn before adding it to the salad for a smoky flavor.
