Spinach Pesto Butter Bean

Ingredients
  

For the Dish
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cans butter beans 15 ounce each, drained and rinsed
  • 5 ounces fresh spinach
  • 1/4 cup pesto
  • 2 tablespoons lemon juice
  • 1/4 cup vegetable broth
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the drained and rinsed butter beans, spinach, pesto, lemon juice, and vegetable broth.
  5. Cook, stirring occasionally, until the spinach is wilted and the beans are heated through, about 5-7 minutes.
  6. Season with salt and black pepper to taste.

Notes

Serve hot as a main dish or a side.
