Ingredients
  

For the Salad
  • 2 cups cooked chicken shredded or diced
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen, thawed, or canned, drained
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely diced
For the Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Equipment

Method
 

  1. In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, and red onion.
  2. In a small bowl, whisk together the mayonnaise, lime juice, chili powder, cumin, salt, and black pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
  4. Serve immediately or chill for later.

Notes

This salad is delicious served on its own, in lettuce wraps, or as a sandwich filling.
