Wet Ingredients
  • 3 large very ripe bananas mashed
  • 1/3 cup melted butter
  • 1 large egg lightly beaten
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth. Stir in the melted butter, beaten egg, and vanilla extract until combined.
  3. In a separate medium bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients. Mix with a spatula only until just combined. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, loosely cover it with foil for the last 15 minutes of baking.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.

Notes

For a richer flavor, you can substitute brown sugar for the granulated sugar. If your bananas are not very ripe, the bread will be less sweet and moist.
