Simple Honey Garlic Chicken Bites

Ingredients
  

Chicken and Seasoning
  • 2 teaspoons extra-virgin olive oil or canola oil
  • 1.5 pounds boneless, skinless chicken breasts cut into small cubes (about 1/2 inch)
  • to taste Salt and black pepper
Honey Garlic Glaze
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 3 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional, adjust for heat
For Serving (Optional)
  • As needed Brown or white rice
  • As needed sliced green onions
  • As needed sesame seeds
  • As needed chopped peanuts
  • As needed lime wedges to squeeze over chicken

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Lightly season the cubed chicken with salt and pepper. Use less salt because the soy sauce contains sodium.
  3. Add the chicken to the skillet and brown on one side for about 3 to 4 minutes.
  4. While the chicken browns, prepare the glaze. Whisk the honey, soy sauce, garlic, and red pepper flakes, if using, in a small bowl until combined.
  5. Turn the chicken pieces over. Add the sauce to the pan and toss to coat the chicken. Cook for 4 to 5 more minutes until the chicken is cooked through.
  6. Serve the chicken with steamed rice. Top with green onions, sesame seeds, and a squeeze of lime juice if you want.

Notes

The small chicken pieces cook fast. Watch them closely to avoid overcooking.
