Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, melted butter, sugar, beaten egg, and vanilla extract. Mix until just combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients. Mix with a spatula until the flour streaks are almost gone. Do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.
Notes
For a richer flavor, use very ripe bananas with brown spots. If you prefer a less sweet bread, reduce the sugar to 1/2 cup.
