Simple Chicken and Vegetable Stir Fry

Method
 

  1. Mix all sauce ingredients (soy sauce, honey, ginger, garlic, cornstarch) in a small bowl. Set aside.
  2. Heat the sesame oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the hot skillet. Cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
  4. Add the broccoli, carrots, bell peppers, and onion to the same skillet. Stir fry for 4 to 6 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Whisk the sauce mixture again and pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens, about 1 to 2 minutes.
  7. Serve immediately over rice or noodles if desired.

Notes

You can substitute the chicken with tofu or shrimp. Adjust the amount of soy sauce if you prefer a less salty flavor.
