Simple Chicken and Vegetable Stir-Fry

Method
 

  1. Mix the soy sauce, honey, and ginger in a small bowl to make the sauce. Set aside.
  2. Heat the sesame oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
  4. Add the broccoli, carrots, and bell pepper to the skillet. Stir-fry for 4 minutes until the vegetables are tender-crisp.
  5. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Toss everything together and cook for 1 to 2 minutes until the sauce thickens slightly.
  7. Serve immediately over brown rice or quinoa, if desired.

Notes

You can substitute chicken with shrimp or firm tofu. Use any firm vegetables you have on hand, such as snap peas or mushrooms.
