- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the diced chicken, broccoli florets, and diced sweet potatoes.
- Drizzle the olive oil over the chicken and vegetables. Sprinkle with garlic powder, onion powder, salt, and pepper. Toss everything together until the chicken and vegetables are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for even cooking.
- Roast for 25 to 30 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender.
- Divide the cooked mixture evenly into four meal prep containers. Store them in the refrigerator for up to four days.
Notes
You can substitute chicken with lean ground turkey or firm tofu. For variety, try using different vegetables like bell peppers or carrots in your next batch.
