Simple Apple Cake

  • 1.5 cups Whole wheat pastry flour
  • 1 tsp Baking soda
  • 0.5 tsp Salt
Wet Ingredients
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Maple syrup
  • 2 large Eggs
  • 0.5 cup Milk (any type)
  • 1 tsp Vanilla extract
Apples
  • 2 medium Apples, peeled and diced Use firm varieties like Honeycrisp or Granny Smith
  • 1 tsp Cinnamon

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, mix the applesauce, maple syrup, eggs, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix the batter.
  5. Gently fold in the diced apples and cinnamon.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

You can dust the top with a little extra cinnamon before baking for added flavor. This cake keeps well covered at room temperature for up to three days.
