Shrimp Stir with Noodles

A quick and flavorful shrimp stir-fry with noodles.

Ingredients
  

For the Stir-Fry
  • 1 pound shrimp peeled and deveined
  • 8 ounces noodles such as lo mein or udon
  • 2 tablespoons vegetable oil divided
  • 1 cup broccoli florets
  • 2 cloves garlic minced
  • 1 inch ginger grated
For the Sauce
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Equipment

  • Wok or large skillet
  • Knife
  • Cutting board
  • Measuring cups and spoons

Method
 

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, bell pepper, and carrot. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  6. Return the cooked shrimp to the skillet. Pour the sauce over the shrimp and vegetables. Stir to coat and cook for 1-2 minutes until the sauce thickens.
  7. Add the cooked noodles to the skillet and toss to combine with the shrimp, vegetables, and sauce. Serve immediately.

Notes

You can add other vegetables like snap peas, mushrooms, or bok choy. Adjust the sauce ingredients to your preference.
