Salmon Bites Bowls

A quick and healthy salmon bowl recipe.

Ingredients
  

Salmon
  • 1 lb salmon fillet skin removed, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Bowls
  • 2 cups cooked rice or quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper any color
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the salmon pieces with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the salmon in a single layer on a baking sheet.
  4. Bake for 10-12 minutes, or until the salmon is cooked through and flakes easily.
  5. While the salmon is baking, prepare the dressing. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper.
  6. To assemble the bowls, divide the cooked rice between two bowls.
  7. Top the rice with the baked salmon bites, chopped cucumber, bell pepper, red onion, and cilantro.
  8. Drizzle the dressing over each bowl and serve immediately.

Notes

You can customize your bowls with your favorite vegetables and grains. Other topping ideas include avocado, corn, or black beans.
