- Preheat your oven to 400°F (200°C).
- In a bowl, toss the salmon pieces with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
- Spread the salmon in a single layer on a baking sheet.
- Bake for 10-12 minutes, or until the salmon is cooked through and flakes easily.
- While the salmon is baking, prepare the dressing. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper.
- To assemble the bowls, divide the cooked rice between two bowls.
- Top the rice with the baked salmon bites, chopped cucumber, bell pepper, red onion, and cilantro.
- Drizzle the dressing over each bowl and serve immediately.
Notes
You can customize your bowls with your favorite vegetables and grains. Other topping ideas include avocado, corn, or black beans.
