Roasted Veggie with Yogurt Sauce

Ingredients
  

For the Roasted Vegetables
  • 1 lb Mixed vegetables (e.g., broccoli, bell peppers, zucchini, red onion) Cut into bite-sized pieces
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Yogurt Sauce
  • 1 cup Plain Greek yogurt
  • 1 clove Garlic Minced
  • 1 tbsp Lemon juice
  • 1 tbsp Fresh dill Chopped (optional)
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the mixed vegetables with olive oil, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on the prepared baking sheet.
  4. Roast for 25-30 minutes, or until the vegetables are tender and slightly caramelized, flipping them halfway through.
  5. While the vegetables are roasting, prepare the yogurt sauce. In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, chopped dill (if using), salt, and pepper. Stir until well combined.
  6. Serve the roasted vegetables warm with the yogurt sauce on the side or drizzled over the top.

Notes

You can customize the vegetables based on what you have available. Other good options include sweet potatoes, carrots, or Brussels sprouts. Adjust roasting time as needed for different vegetables.
