Ingredients
  

For the Roasted Apples & Carrots
  • 2 large apples cored and cut into 1-inch pieces
  • 1 pound carrots peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon cinnamon optional

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the apple pieces and carrot pieces with olive oil, salt, pepper, and cinnamon (if using) until evenly coated.
  3. Spread the mixture in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until the carrots are tender and the apples are softened, stirring halfway through.
  5. Serve hot.

Notes

You can use any variety of apples you prefer. For a sweeter dish, add a drizzle of maple syrup in the last 5 minutes of roasting.
