Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the apple pieces and carrot pieces with olive oil, salt, pepper, and cinnamon (if using) until evenly coated.
- Spread the mixture in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the carrots are tender and the apples are softened, stirring halfway through.
- Serve hot.
Notes
You can use any variety of apples you prefer. For a sweeter dish, add a drizzle of maple syrup in the last 5 minutes of roasting.
