Method
- Place pork ribs and water in a large pot. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add onion, carrots, celery, garlic, salt, and pepper to the pot. Continue to simmer for another 30 minutes.
- While the soup simmers, prepare the dumplings. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
- Stir in milk and melted butter until just combined. Do not overmix.
- Drop spoonfuls of the dumpling batter into the simmering soup. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
- Serve hot.
Notes
You can add other vegetables like peas or corn if desired.
