Quick Chicken Quesadilla

Ingredients
  

  • 1/2 cup shredded rotisserie chicken loosely packed
  • 1/2 cup shredded queso chihuahua
  • 1/4 cup pico de gallo plus more to serve
  • 1/8 tsp. smoked paprika
  • 1 burrito-size tortilla
  • 1 Tbsp. olive oil
  • To serve Sour cream

Equipment

  • Medium bowl
  • Large skillet

Method
 

  1. Stir together the chicken, cheese, and pico de gallo in a medium bowl.
  2. Spread the mixture in an even layer on half of one side of the tortilla.
  3. Fold over the top of the tortilla.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the quesadilla to the pan and cook for 2 to 3 minutes until the bottom of the tortilla is browned.
  6. Flip the quesadilla and cook for 2 to 3 minutes longer until the top of the tortilla is browned and the quesadilla is heated through.
  7. Cut the quesadilla into wedges and serve with additional pico de gallo and sour cream.

Notes

This recipe uses rotisserie chicken for speed.
