Method
- Stir together the chicken, cheese, and pico de gallo in a medium bowl.
- Spread the mixture in an even layer on half of one side of the tortilla.
- Fold over the top of the tortilla.
- Heat the olive oil in a large skillet over medium heat.
- Add the quesadilla to the pan and cook for 2 to 3 minutes until the bottom of the tortilla is browned.
- Flip the quesadilla and cook for 2 to 3 minutes longer until the top of the tortilla is browned and the quesadilla is heated through.
- Cut the quesadilla into wedges and serve with additional pico de gallo and sour cream.
Notes
This recipe uses rotisserie chicken for speed.
