- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add ground turkey or beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Stir in the diced tomatoes, kidney beans, black beans, pumpkin puree, and broth.
- Add chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir well to combine.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally, to allow the flavors to meld.
- Season with salt and black pepper to taste before serving.
