Pineapple Cucumber Salad

Ingredients
  

  • 1 can (20 oz) crushed pineapple, undrained
  • 2 cups chopped fresh pineapple
  • 2 cups chopped cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine crushed pineapple, chopped pineapple, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour dressing over salad and toss to combine.
  4. Chill for at least 15 minutes before serving.

Notes

This salad is best served chilled. You can add other ingredients like bell peppers or jalapenos for extra flavor.
