Philly Cheesesteak Mac & Cheese

Ingredients
  

For the Mac and Cheese
  • 1 pound Elbow macaroni
  • 4 tablespoons Butter
  • 1/4 cup All-purpose flour
  • 3 cups Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 cups Shredded sharp cheddar cheese
  • 1 cup Shredded provolone cheese
For the Cheesesteak Topping
  • 1 pound Thinly sliced beef sirloin or ribeye
  • 1 tablespoon Olive oil
  • 1 large Onion thinly sliced
  • 2 cloves Garlic minced
  • 1/2 teaspoon Worcestershire sauce

Equipment

  • Large pot
  • Large skillet
  • Colander

Method
 

  1. Cook the macaroni according to package directions. Drain and set aside.
  2. In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in the milk until smooth. Bring to a simmer, stirring, until the sauce thickens, about 5 minutes.
  4. Remove from heat. Stir in the salt, pepper, cheddar cheese, and provolone cheese until melted and smooth.
  5. Add the cooked macaroni to the cheese sauce and stir to combine. Set aside.
  6. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned. Remove beef from skillet and set aside.
  7. Add the sliced onion and bell pepper to the same skillet. Cook until softened, about 5-7 minutes.
  8. Add the minced garlic and Worcestershire sauce to the skillet. Cook for 1 minute more until fragrant.
  9. Return the cooked beef to the skillet with the vegetables. Stir to combine.
  10. Spoon the cheesesteak mixture over the mac and cheese. Serve immediately.

Notes

You can add mushrooms to the cheesesteak topping if desired. For a spicier kick, add a pinch of red pepper flakes.
