Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas thoroughly with a fork.
- Stir the melted butter and sugar into the mashed bananas. Mix in the eggs and vanilla extract until just combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients. Mix gently with a spatula until no streaks of flour remain. Do not overmix the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For extra flavor, you can add 1/2 cup of chopped walnuts or chocolate chips to the batter before baking.
