- Line a baking sheet with parchment paper.
- In a medium bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet. Aim for about 1 tablespoon per bite.
- Place the baking sheet in the freezer and freeze for at least 1 hour, or until firm.
- Once frozen, transfer the bites to an airtight container and store in the freezer.
