- Heat olive oil in a large pot over medium-high heat. Sear the beef short ribs until browned on all sides. Remove beef from the pot and set aside.
- Add the sliced onions to the pot and cook, stirring occasionally, until softened and lightly browned, about 10-15 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Return the beef to the pot. Pour in the beef broth and add the dried thyme. Bring to a boil, then reduce heat, cover, and simmer for at least 45 minutes, or until the beef is tender.
- Season with salt and black pepper to taste. Serve hot.
Notes
For a richer flavor, you can deglaze the pot with a splash of red wine after cooking the onions and before adding the beef broth.
