Onion Beef Short Soup

Ingredients
  

For the Soup
  • 1 lb Beef short ribs boneless, cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 2 Large onions thinly sliced
  • 2 cloves Garlic minced
  • 6 cups Beef broth
  • 1 tsp Dried thyme

  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef short ribs until browned on all sides. Remove beef from the pot and set aside.
  2. Add the sliced onions to the pot and cook, stirring occasionally, until softened and lightly browned, about 10-15 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Return the beef to the pot. Pour in the beef broth and add the dried thyme. Bring to a boil, then reduce heat, cover, and simmer for at least 45 minutes, or until the beef is tender.
  5. Season with salt and black pepper to taste. Serve hot.

Notes

For a richer flavor, you can deglaze the pot with a splash of red wine after cooking the onions and before adding the beef broth.
