One Pot Taco Pasta Crowd Pleaser

This recipe makes a simple, one-pot taco pasta dish suitable for serving a large group.

Ingredients
  

  • 1 lb ground beef
  • 1 can diced tomato 15 oz - 425g
  • 1 can whole kernel corn 15 oz - 425g
  • 1 can tomato sauce 15 oz - 425g
  • 2 cups water
  • 1 package taco seasoning
  • to taste salt
  • to taste pepper
  • 2 cups elbow macaroni uncooked
  • 1.5 cups colby jack cheese

  • Large pot

Method
 

  1. Brown the ground beef in a large pot over medium-high heat. Drain the fat and return the beef to the pot.
  2. Add the taco seasoning, water, diced tomatoes, corn, and tomato sauce. Bring the mixture to a boil.
  3. Add the uncooked macaroni and reduce the heat to low. Cover and simmer for 10 to 15 minutes, stirring occasionally, until the pasta is cooked through.
  4. Remove the pot from the heat. Sprinkle the cheese on top and cover the pot.
  5. Serve once the cheese is melted.
