Oatmeal Apple Cake

Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 medium apples peeled, cored, and chopped

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch baking pan.
  2. In a large bowl, whisk together the flour, rolled oats, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in the chopped apples.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

Serve warm or at room temperature. This cake is delicious on its own or with a scoop of vanilla ice cream.
