Method
- Line baking sheets with parchment paper.
- In a saucepan, combine sugar, butter, milk, and cocoa powder. Bring to a rolling boil over medium heat, stirring constantly. Boil for exactly 1 minute.
- Remove from heat. Stir in peanut butter and vanilla extract until smooth.
- Add rolled oats and stir until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheets.
- Let the cookies cool and set completely before serving.
Notes
Store leftover cookies in an airtight container at room temperature.
