- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mix the mashed bananas, melted butter, sugar, eggs, and vanilla extract until combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix.
- Fold in the chopped nuts, if you are using them.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For extra moisture, you can add 1/4 cup of sour cream or plain yogurt to the wet ingredients. If you do not have very ripe bananas, you can mash them and microwave them for 30 seconds to soften them before using.
