Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, melted butter, sugar, egg, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until the flour streaks almost disappear. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.

Notes

For extra moisture, you can add 1/4 cup of sour cream or plain yogurt to the wet ingredients. If your bananas are not very ripe, the bread will be less sweet.
