- In a large bowl, combine the rinsed and drained chickpeas, halved cherry tomatoes, diced cucumber, sliced red onion, halved Kalamata olives, and chopped fresh parsley.
- In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Pour the dressing over the chickpea mixture and toss gently to combine.
- Taste and adjust seasoning if needed. Serve immediately or chill for later.
Notes
This salad is great on its own, as a side dish, or stuffed into pita bread.
