Mediterranean Chicken Gyros

This recipe makes delicious Mediterranean chicken gyros. Tender chicken is marinated in lemon and herbs, then grilled and served in warm pita bread with fresh toppings.

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For Serving
  • 4 pita breads
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cucumber
  • 1/4 cup tzatziki sauce

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
  2. Preheat your grill to medium-high heat.
  3. Grill the chicken for 5-7 minutes per side, or until cooked through and slightly charred.
  4. Warm the pita breads on the grill or in a dry skillet.
  5. Assemble the gyros by filling each warm pita with grilled chicken, chopped tomatoes, red onion, cucumber, and a generous dollop of tzatziki sauce.

Notes

You can substitute chicken breast for thighs if preferred. For a vegetarian option, use firm tofu or halloumi cheese.
