- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
- Preheat your grill to medium-high heat.
- Grill the chicken for 5-7 minutes per side, or until cooked through and slightly charred.
- Warm the pita breads on the grill or in a dry skillet.
- Assemble the gyros by filling each warm pita with grilled chicken, chopped tomatoes, red onion, cucumber, and a generous dollop of tzatziki sauce.
Notes
You can substitute chicken breast for thighs if preferred. For a vegetarian option, use firm tofu or halloumi cheese.
