Meatball & Mashed Potato Bake

Ingredients
  

For the Meatballs
  • 500 g ground beef
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potatoes
  • 1 kg potatoes peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sauce
  • 1 can diced tomatoes 400g, undrained
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce

Equipment

Method
 

  1. Preheat your oven to 190°C (375°F).
  2. In a bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, egg, salt, and pepper. Mix well and form into small meatballs.
  3. Brown the meatballs in a skillet over medium-high heat. Drain any excess fat.
  4. While the meatballs are browning, boil the potatoes in salted water until tender. Drain and mash with milk, butter, salt, and pepper until smooth.
  5. In a separate bowl, mix the diced tomatoes, beef broth, and Worcestershire sauce.
  6. Place the browned meatballs in a baking dish. Pour the tomato sauce mixture over the meatballs.
  7. Spoon the mashed potatoes over the meatballs and sauce, spreading evenly.
  8. Bake for 25-30 minutes, or until the top is golden brown and the bake is bubbly.

Notes

You can add cheese on top of the mashed potatoes before baking for extra flavor.
