Mashed Potato Puff Bites

Ingredients
  

For the Puff Bites
  • 2 cups mashed potatoes cold
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 1 egg beaten
  • 2 tablespoons chopped chives optional
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cold mashed potatoes, shredded cheddar cheese, flour, beaten egg, chives (if using), salt, and pepper. Mix until well combined.
  3. Scoop rounded tablespoons of the mixture onto the prepared baking sheet, forming small balls.
  4. Bake for 18-20 minutes, or until golden brown and slightly puffed.
  5. Serve warm.

Notes

You can add other seasonings like garlic powder or onion powder to the potato mixture. These bites are best served fresh.
