Ingredients

For the Banana Bread
  • 3 ripe bananas, mashed
  • 1/3 cup maple syrup
  • 1/4 cup bourbon
  • 1/3 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Equipment

  • 9x5 inch loaf pan
  • Large mixing bowl
  • Whisk
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas. Stir in the maple syrup, bourbon, melted butter, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, you can let the batter rest for 30 minutes before baking. This allows the bourbon flavor to meld with the other ingredients.
