Mango Cucumber Salad

A refreshing and simple salad with sweet mango, crisp cucumber, and a light vinaigrette.

Ingredients
  

Salad
  • 2 ripe mangoes peeled and diced
  • 1 large cucumber peeled, seeded, and diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons lime juice fresh
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper freshly ground

Method
 

  1. In a large bowl, combine the diced mango, diced cucumber, sliced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  3. Pour the dressing over the mango and cucumber mixture. Toss gently to coat.
  4. Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add a diced jalapeƱo to the salad.
