Ingredients
  

For the Zucchini Noodles
  • 2 medium zucchini
For the Toppings
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/2 cup cooked chicken breast shredded or diced
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup bell pepper diced
  • 2 tablespoons Parmesan cheese grated
  • 1 tablespoon fresh basil chopped
  • salt to taste
  • black pepper to taste

  • Large skillet

Method
 

  1. Wash the zucchini. Use a spiralizer to create zucchini noodles.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Add the zucchini noodles to the skillet. Cook for 2-3 minutes, stirring gently, until they are slightly tender but still have a bite.
  4. Stir in the cooked chicken, cherry tomatoes, and bell pepper. Cook for another 1-2 minutes until heated through.
  5. Season with salt and black pepper to taste.
  6. Divide the zucchini noodle mixture between two bowls. Top with grated Parmesan cheese and fresh basil.
