- Prepare the miso dressing: In a small bowl, whisk together miso paste, rice vinegar, sesame oil, and maple syrup. Gradually add warm water until you reach your desired consistency.
- Cook the tofu and mushrooms: Heat a non-stick skillet over medium heat. Add the cubed tofu and cook until golden brown on all sides. Add the sliced shiitake mushrooms and cook until tender.
- Assemble the bowls: Divide the cooked brown rice between two bowls. Top with the cooked tofu, edamame, shiitake mushrooms, shredded carrots, and chopped scallions.
- Drizzle the miso dressing over each bowl and serve immediately.
Notes
You can customize this bowl with your favorite vegetables or protein. Other additions could include avocado, nori strips, or a sprinkle of sesame seeds.
