Lemon Dilly Chicken Rice Soup

Ingredients
  

For the Soup
  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves minced garlic
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1/2 cup uncooked white rice
  • 1/4 cup chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in shredded chicken and uncooked rice. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is tender.
  5. Stir in fresh dill, lemon juice, salt, and pepper.
  6. Serve hot.

Notes

You can add other vegetables like chopped carrots or celery along with the onion for extra flavor and nutrients.
